The wine is named after the co-founder of Bremerton, Craig Hamilton Willson (CHW) and the first vintage in 2006 was released in honour of him on his 60th birthday.
The grapes were picked to acheive flavoursome varietal characters for our CHW Sparkling Shiraz which has been made using "method traditional". The base wine was oak matured for 6 months, tiraged for bottle fermentation and then spent 18 months ageing on lees to enhance the palate creaminess before being hand disgorged.
The grapes were crushed and fermented in open top fermenters. The resulting wine was matured in oak for 6 months before being transferred to bottle along with a small doseage of yeast and sugar (Tirage). Secondary fermentation occured in the bottle, which created the characteristic sparkle.
The wine shows a fine bead with a mouthfilling middle pallet richness, typical of Langhorne Creek Shiraz.
"CHW" will continue to develop it's fine characteristics with aging but is drinking beautifully right now.
