2003 Wiggy Sparkling ChardonnayLimited Release Our first release sparkling wine has been made using the traditional “methode champeniose” method. It is 100% estate grown Chardonnay from the 2003 vintage. The wine shows a fine bead with a subtle yeast characteristic, providing a middle pallet richness with a refreshing touch of citrus complimenting the dry finish. Three years lees maturation has added a creamy complexity to the wine. The wine is named after the co-founder of Bremerton, Mignonne “Wiggy” Willson. (My Mum!) The grapes were picked to achieve delicate flavours while still maintaining lively acidity, before being crushed and the free run juice separated and then fermented to create our “base wine”. It was then transferred to bottle along with a small dosage of yeast and sugar (Tirage). Secondary fermentation occurred in the bottle, which created the characteristic sparkle. “Wiggy” was then left to age for three years on yeast lees before being disgorged and packed ready for your enjoyment “Wiggy” will continue to develop its fine characteristics with aging but is wonderful right now.
