2001 Wiggy Sparkling Chardonnay

VINTAGE 2001:

Our first release sparkling wine made in the traditional methode champeniose method. Including nearly three years lees maturation it is 100% 2001 Chardonnay from our Kilpuruna vineyards. The wine shows a fine bead with a subtle yeast characteristic, fine bead, providing a middle pallet richness with a refreshing touch of citrus complimenting the dry finish.

WINEMAKING:

Estate grown Chardonnay was picked to achieve delicate flavours while still maintaining lively acidity. The grapes were crushed and the free run juice separated and then fermented to create our
base wine. This is then transferred to bottle along
with a small dosage of yeast and sugar (Tirage). A secondary fermentation occurs in the bottle, which creates the characteristic sparkle.

Wiggy is then left to age for three years on yeast lees, during which time the yeast cells breakdown adding a creamy complexity to the finished wine. Finally, the yeast is removed (disgourged) and the wine is packed ready for your enjoyment.

The wine is named after the co-founder of Bremerton, Mignonne "Wiggy" Willson. (My Mum!)

Serve as a celebration drink or an aperitif.
