RESERVE CHARDONNAY
Winemaking experimentation and a desire to achieve excellence in a reserve Chardonnay style has led to the release of this wine.
On the nose this wine shows lifted lemon citrus with hints of cashew and nougat. The palate is showing a varietal fruit purity, supported by a complexity achieved through the careful use of fine French oak. This generosity on the palate is tempered by a fine acid structure and textural finish giving the wine great persistence.
The Chardonnay juice was fermented under cool conditions in a combination of new and old French oak barriques using wild and inoculated fermentation. The wine was matured on yeast lees for 10 months.
CELLARING
The wine is delicious to drink now, however it will develop more complexity with age.
SERVE
Serve slightly chilled and pair with white meat such as pork, poultry and veal. The wine will also compliment oily fish such as salmon and tuna.
