MISTELLE
This is the term used to describe wines made using fortified grape juice.
In an interesting twist, the juice to make our Mistelle is from the same batch of Chardonnay that was used to make our inaugural "Wiggy" sparkling Chardonnay. The result is a complex and developed, luscious dessert style wine.
In order to make this delicious fortified style, a specially selected parcel of Chardonnay was chosen to be fortified, then matured for a number of years in older French and American oak barrels.
CELLARING
Although the careful aging process undertaken in oak barrels at the winery has allowed this wine to develop into a delicious fortified style ready for drinking now, the Mistelle will continue to mature and change in the bottle, and so can be laid down for a time.
SERVE
Chilled as an aperitif, with dessert or after a meal as you would a port or a Muscat.
